A Surprise Birthday Party: Indian Style Feast

We recently had a fabulous private cooking event where we hosted a special birthday party. The theme was a Classic Indian Style Feast, and we curated a menu based on the birthday girl’s favorites.

The menu that we came up with, included Tandoori Shrimp, Roasted Corn Tikki with Mint Chutney, Spinach Tahiri, Lamb Rogan Josh, and Cucumber Raita.

The guests arrived early to give the birthday girl a pleasant surprise for her special day. She was so touched by her husband’s choice of celebrating her birthday by cooking with friends. The menu choice made it even better to her, since Indian cuisine is her favorite type of food.

The party started with Butternut Squash Soup Shots and a Tandoori Shrimp appetizer, which was paired with a German Riesling wine. Afterwards, the group was invited into the kitchen where the chef explained the menu and divided them into teams to make the full course of the Indian Feast together. May Fridel gave them a lesson on how to use spices, including how to roast cumin and how to mix up spices to make a masala. The Lemon Flavored Panna Cotta Topped with Blackberries was a perfect palate cleanser, and was a great dessert to finish the meal. All in all, it was a joyful evening, and it created a special memory for the birthday girl.

Sukkot the Harvest Festival: A Beautiful Tradition of Ancient Jewish Culture

In this holy time of the year for Judaism, Sukkot is a seven day agricultural holiday celebrated to honor the harvest season and commemorate the protection given to the children of Israel that fled Egypt. The name of the holiday comes from the hut-like structures that the children of Israel stayed in on their journey back to Israel. One major tradition over this holiday is to build a hut and stay in it for the first day of this holiday while not doing any work. Another major tradition is to get four kinds of vegetation: one citron, one palm frond, three myrtle twigs, and two willow twigs. These different materials are supposed to represent the different personalities of people following the Jewish faith, and how they live in unity together. To honor the “Harvest Festival” it is also common to get freshly grown fruits and vegetables to make traditional Jewish dishes like kreplach (stuffed dumplings), chicken soup, and kugels. At Passion for Spices, we want to showcase this classic cultural tradition in our upcoming Celebration of Jewish Traditions class, where Chef Sam Kadko will be teaching the following menu:

Passion for Spices is Thrilled to Announce our Fall After School Cooking Program

This year we were thrilled to launch our Kids and Teens After School Cooking Program, where we give an opportunity for young chefs to come and experiment with food from various regions of the world. In this program, we focus on techniques and seasonal food ingredients harvested so we can teach the students the different ways of preparing them. As always we follow sustainable practices and teach the kids how to make everything from scratch, without processed ingredients.

What to Expect

The young chefs will be learning about various cooking techniques and classic recipes taught by trained chefs. They will be also receiving instructions as to how to get organized in the kitchen and how to clean as they go while they prepare each dish. Each class runs for two hours and the young chefs will enjoy a generous sample of each delectable dish they prepared.

    • Our Chef Sam Kadko is our main culinary instructor, who has more than 30 years of experience in culinary education and is an expert on many foods of the world.

    • Our guest chefs are experts in their culinary fields.

  • Hands On

    • We focus on teaching the students classic techniques and culinary practices like roasting, and get them comfortable in the kitchen.

    • Each young chef is given the opportunity to learn hands-on cooking, and will be trained to experiment with various cooking processes, tools, and recipes.

  • Individualized Experience

    • We cater individual attention to each student and their dietary concerns, and accommodate as necessary.

We will be showcasing many classic and authentic recipes from around the world, especially from around the Mediterranean, Asia, and the Americas.

Seasonal Farm to Table Approach

We procure organic ingredients from local and organic farmers and make sure they are incorporated into our recipes. We try to introduce vegetables that are not familiar to the students and teach the students how to prepare and handle them. Also, we teach the kids how to utilize all parts of the produce, so they can reduce the waste of the ingredients they use.

We are planning to do a winter and spring session for the After School Cooking Program.

After more than a decade of continuous culinary programs, we are so thankful to have trained so many young chefs at our Passion for Spices™ Cooking School. We are happy to say that we have been able to convert many picky eaters to enjoy different foods that they never tasted or prepared before. We look forward to our first Fall Season Program, and hope the young chefs come enjoy, learn, and apply at home the culinary knowledge we share.

Our Recent Tuscan Feast Cooking Class Inspired by May Fridel's Tuscan Travel

This summer as part of our Culinary Travel Program, I traveled to Tuscany and the Roman area, where I was thrilled to learn about authentic Tuscan food taught by local chefs. This is a Tuscan Feast class we had recently, which showcased classic Tuscan cuisine. As always we focus on local, farm-fresh, and quality ingredients for our cooking classes.

Everyone had a hands-on experience cooking these classic recipes and enjoying them. At the end of the class, everyone ate the meal they cooked with a paired wine. Our Tuscan feast was a great success, and everyone that participated had a great time. The menu for the feast was as follows:
